Breakfast Cupcakes
Because everyone loves cupcakes right? Well at least my kids do.
Since we were falling into a breakfast rut, pancakes, waffles, eggs & bacon, oatmeal, blueberry muffins- repeat-I thought this would be a nice combination of ingredients and flavors and seemed like it would align with the small flavor palette- cheese, eggs, bacon-(optional peppers, onion, mushroom-think omelette) of my toddlers.
Here is my recipe for simple, delish, and QUICK breakfast cupcakes---
Easy, 4 Ingredient Breakfast Cupcakes
Yields 6 muffins-
Ingredients:
2 large eggs
2 cooked slices of bacon
1/2 of grated sharp cheddar cheese
1/2 tsp salt
1/4 tsp pepper
*Vegetable oil or cooking spray for your muffin pan
Directions:
Preheat oven to 375*, lightly coat the muffin pan with either oil or cooking spray.
In a mixing bowl combine all your ingredients.
Divide between your six muffin cups and bake for 15 minutes or until eggs puff up and are light, golden brown.
