Friendsgiving- Mini Chicken Pot Pies
Tonight we celebrated friends giving over an amazing spread of food, lots of laughter, and chasing babies!
I made the most delish and easy-I am NOT an expeience cook by any means-
(see blog post here about the less than 1 year I have been cooking for- don't judge!-and why...)
so when I say easy, I mean it!
I was making 18-20 of these mini pot pies. These are great for parties, potlucks, or to just add to an existing spread of appetizers/ dinner. They are bite size so kids can take one and actually eat the whole thing and it actually fits in their little hands making the clean up a little less horrible for us parents. Their small size makes them great appetizers or finger food for adults too, especially when you're just a little hungry but want something warm in your belly!
Here you go---
Mini Chicken Pot Pies
2 chicken breasts
2 tbsp poultry seasoning
2 tsp onion powder
3 cans of cream of chicken soup-(25-30 ounces)
2 tsp garlic salt
20-25 ounces of Pillsbury BISCUIT dough-2-3 cans (don't get crescent rolls by accident)
2 cups of cheddar cheese
2 cups frozen mixed vegetables
Directions
-Bake chicken breasts at 350* for 25-40 minutes (depending on how thick & thawed they are)
-Set chicken aside for a bit
(I baked mine right before lunch time-11am, then made my mini pot pies at 1pm)
***An alternative to this would be using a store bought hot rotisserie chicken ready to go
-Preheat oven to 400*
-In a mixing bowl add chicken, vegetables, seasoning, cheese, and soup
-Spray your muffin tin with non-stick spray
-Add biscuits to your tin, press down into each tin and up and around the sides
-Spoon in your mixture (about 3/4 of the way up is best)
-Cook for 10-12 minutes
-Let set for 10 minutes or more (it helps the dough set so they don't crumble apart)
